This wine comes to us from the people of Hatzidakis Winery, who work with an organic and biodynamic philosophy in their vineyards and with minimal intervention in their cellars. Made with the Assyrtiko varietal from 3 parcels at Pyrgos, Emporio and Messaria-Vothonas on Santorini.
The vines are more than 100 years old and grow in volcanic and pumice stone, at an altitude of 220 metres. They have been turned in the traditional koulouri way, a shape that resembles a pretzel. They receive constant sun, minimal rain and powerful winds.
After hand-picking, the grapes have 12 hours of skin contact during maceration. The wine is matured on wild yeast cells for 8 months in steel tanks, and bottled without filtering.
The wine is characterized by its beautiful golden colour, delicate notes of ripe fruit, fresh citrus and minerality on the nose. long and complex on the palate, with nice longevity and powerful acidity - typical of wines from the vineyards of Santorini.
Serve with oysters, fatty fish like tuna or salmon, white or red meat and cheese.
Enjoy a glass of Cuvee no. 15 at Restaurant Brace or Terroiristen Vinbar- og Butik in København, Hörta Brygga south of Malmö or Talldungen in Brösarp.
The wine has also been on the wine list at Geranium, Noma and Esperanto.
