Organic and minimal intervention wine produced from the north-facing and cool climate single vineyard of the Roditis grape variety, in the village of Ano Diacopto inside the P.D.O. zone of Patras. 

The vines are cultivated in rocky, limestone soils and shaped in the traditional non-irrigated bush style, 46 years old and growing at 850 meters altitude, they provide low-yield and high-quality grapes with a significant acidity.

For the vinification, only the free run most is used. It is fermented with stems and skins in clay amphoras on wild yeasts exclusively. Maceration takes 21 days, starting the spontaneous malolactic fermentation. The wine is then aged for 6 months in oak barrels (third and fourth use). It is bottled unfined and unfiltered, with minimal sulphites added.

The wine is characterized by a light amber colour, aromas of tangerine, apricot, apple and white pepper. It has a full creamy mouthfeel with soft tannins, refreshing acidity, herbaceous hints and a peppery aftertaste.

The wine pairs well with vegetable plates, grilled octopus and lamb chops as well as Japanese cuisine and peppery salads.
